This YUMMY healthy strawberry pie is gluten free, sugar free, grain free and dairy free!  I guess it might be considered a raw, whole food dessert depending on what you use for the sweetener.  If you like strawberries, I guarantee you’ll like this strawberry pie.   You might not have all the ingredients in your kitchen for this one, but then again, if you are a health conscience person like me, you may.   It’s so very simple to make and takes no time.  The hardest part is the waiting for it to chill so it can be sliced.

It’s important to use organic strawberries because they are on the “dirty dozen” list.  They absorb nasty pesticides easily because their skin is so thin.

I don’t bother to take the stems off the strawberries, the blender does a good job of chopping them up, and I figure they add more nutrients to an already healthy strawberry pie.

You can add your own variations to this strawberry pie, even make it with a different type of fruit or berry.  It could be done with or without crust, made into squares so it can be transported more easily (but I wouldn’t let it get too warm due to the coconut oil).

  • It's best to use all organic ingredients so this pie is the healthiest it can be.
  • Crust
  • 3/4 Cup Walnuts or Pecans
  • 1/4 Cup Shredded Coconut
  • Filling
  • 2 Cups Fresh Organic Strawberries
  • 1 Cup Coconut Oil
  • 1 Cup Raw Cashews or Walnuts
  • 1/2 Cup Honey or Xylitol (I use Xylitol)
  • 2 TBS Vanilla
  • Pinch of Salt


  1. Put nuts for the crust into a blender or food processor and break them down. It's not necessary to make them a powder, the extra crunch is nice. I don't put the shredded coconut in the blender, but you can if you'd like smaller pieces.
  2. Press the nuts into a 9" pie plate (or whatever container you prefer). A glass rectangle dish would work for making them squares too.
  3. Filling
  4. Again, you can use either a food processor or blender. I have only used a Vitamix and it does this process well. Add some of the strawberries, stems in all, along with some of the coconut oil and let that emulsify a bit, then continue adding the remaining ingredients adding a little at a time. The idea is just not to overwhelm your machine with all the ingredients at once. Use your discretion as to how much you add at a time.
  5. Once everything is liquefied, pour it into your pie plate and chill for 3 hours, then enjoy it's creamy goodness!!
